Ingredients: 2 ripe avocados. 1/4 cup diced red onion. 1/4 cup diced tomato. 1/4 cup chopped cilantro. 1 jalapeo pepper, finely chopped optional for some heat. 2 cloves garlic, minced. Juice of 1 lime. Salt and pepper to taste.
Instructions: Cut the avocados in half, take out the pit, and scoop out the flesh into a bowl. To the bowl with the avocados, add the tomato, red onion, cilantro, and garlic. Chive pepper, chopped very small, can be added if you like it hot. Pour the juice of one lime over the things in the bowl. Mash and mix everything together with a fork or potato masher until the guacamole is the consistency you want it to be. Add salt and pepper to taste in the guacamole. Serve right away with low-carb chips or your favorite keto-friendly vegetables.
