Ingredients: 1 cup warm milk 110F/43C. 2 1/4 teaspoons active dry yeast. 1/4 cup granulated sugar. 4 cups all-purpose flour. 1/4 cup unsalted butter, melted. 3 large egg yolks. 2 tablespoons orange zest. 1/2 teaspoon salt. Vegetable oil, for frying. 1/2 cup orange marmalade. Powdered sugar, for dusting.
Instructions: Mix the active dry yeast and warm milk in a small bowl. Wait five minutes for it to get foamy. Combine the egg yolks, sugar, flour, melted butter, orange zest, and salt in a sizable mixing bowl. Once a dough forms, pour the yeast mixture into the dry ingredients and stir. Until the dough is smooth and elastic, knead it for approximately five minutes on a floured surface. Once it is in a greased bowl, cover it with a cloth and leave it to rise until doubled in size, about 1 hour. After pounding the dough, roll it out to a thickness of 1/4 inch. Cut out doughnut shapes with a round cutter and arrange them on a baking sheet. For half an hour, cover and allow them to rise. Preheat vegetable oil to 350F 175C in a deep fryer or large pot. Fry the doughnuts gently for 2 to 3 minutes on each side, or until they are golden brown. blot with paper towels. Once the doughnuts are safe to handle, pipe orange marmalade into each one using a piping bag. Sprinkle powdered sugar on top of the filled doughnuts.
