thai-style sauteed pork and ong choy.
i can’t believe that when i was a kid, i hated ong choy. how was my mom cooking it? because i’ve pretty sure it would be good even without any strong seasonings.
as promised, my version of pad pak boong with chicken.
i got this great ong choy at the farmers market and made it right away. it’s a bit different because i used a darker chinese soybean paste instead of yellow fermented soybeans, which i don’t have readily. i think a better substitution would be shiro miso.

i loved all the meats in this version (i think the meatballs are homemade) but i think i like the broth at yai’s better. will have to revisit the pa ord version but not soon for the aforementioned reason.
