This healthy and tasty dip is based on the famous Neiman Marcus Dip. It has black beans, corn, tomatoes, and a tangy lime-cumin dressing. It's great for gatherings, parties, or as a snack without feeling bad!
Ingredients: 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn, drained. 1 can 15 oz diced tomatoes, drained. 1/2 cup diced red onion. 1/2 cup diced bell pepper. 1/4 cup chopped fresh cilantro. 1/4 cup lime juice. 1 tsp garlic powder. 1 tsp cumin. 1/2 tsp chili powder. Salt and pepper to taste. 1 avocado, diced optional.
Instructions: In a large bowl, combine black beans, corn, diced tomatoes, red onion, bell pepper, and cilantro. In a small bowl, whisk together lime juice, garlic powder, cumin, chili powder, salt, and pepper. Pour lime juice mixture over bean mixture and toss to coat evenly. If using avocado, gently fold in diced avocado. Refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve with baked tortilla chips or vegetable sticks.
