I ate a few wild leek leaves today and it tasted and felt incredible! Sweet and oniony and bright! Apparently, they are full of vitamins A and C and lots of minerals. I was lifting the entire plants in order to transplant a couple dozen into a patch in the herb garden, as recommended by Terrylyn Brant, who no longer harvests these endangered native foods from the wild. We also had a patch in a bed under a tall pine tree at the Roughwood Seed Collection. As I was lifting these, I tried to tell them about their new life and how they’d be taken care of and have lots of room to spread, but it sort of felt like trying to convince people to move to the moon.
