Feast your eyes on the PERFECT Roux! Fewer than 25 minutes to make a brick, almost black, roux. Smells dee-vine! Onions & garlic thrown in, & then had to make some exotic choices about flavorings since I don't have my usual Gulf Coast/Cajun cuisine staples of garlic powder, onion powder, paprika, dry mustard, cayenne, Mississippi bay leaves, oregano, & thyme. Opted for Indian bay, black mustard seeds, cumin, whole dried chilis, & hing. I was taught how to make a roux & gumbo by a Biloxi Cajun by the last name of Broussard. I was taught Indian cooking by Malaysian-Indian chef Maharani Berg.
