Excellent last meal of the day :) mix of cooked and raw. I broke out a book that I had bought a very long time ago called Feeding the whole family. I used a baked vegan πͺ recipe yesterday to make with my niece. Today made the π and garlic quinoa salad. I topped it on top of some homegrown green Salas from our garden. Along with tomatoes, avocado and a bit more lemon juice. The quinoa itself is cooked but is tossed with raw diced carrots, parsley from our garden, sunflower seeds, and the garlic sauce as indicated in the recipe. This quinoa recipe tastes really fresh π a perfect dish for a pot luck or a gathering. Can be made the day before, stored in fridge and eaten as a cold salad side dish. As you see here I chose to use it as a green salad topper. Got to get my greens. Quinoa is an excellent choice if you are going to include some cooked food. I consider it more of a seed than a grain because it is very nutritious and a good source of plant based protein.
