Happy food for me isn’t always fruit. I love huge salads! 🥗 For my Wednesday brunch I made a big salad topped with curry zucchini and pecans sautéed in a tiny bit of coconut oil. While I was eating this I added organic raisins and nori. I also almost always add salsa and/or sauerkraut to my salads for a little zang, because who doesn’t love zang?! 😂 and nooch.
