Ingredients: 1 tbsp olive oil. 1 onion, finely chopped. 2 cloves garlic, minced. 2 carrots, diced. 2 celery stalks, diced. 1 tsp dried thyme. 1 tsp dried rosemary. 4 cups vegetable broth. 2 cans 15 oz each white beans, drained and rinsed. 1 can 14.5 oz diced tomatoes. 2 cups chopped kale. Salt and pepper to taste.
Instructions: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Saut until softened, about 5 minutes. Stir in dried thyme and rosemary. Pour in vegetable broth, white beans, and diced tomatoes. Bring to a simmer. Let the soup simmer for 15-20 minutes, allowing flavors to meld together. Add chopped kale and cook for an additional 5 minutes until kale is wilted. Season with salt and pepper to taste. Serve hot and enjoy!
