A quick and flavorful stir-fry recipe with minced meat or tofu, infused with delicious curry flavors and colorful vegetables. Perfect for a weeknight dinner!
Ingredients: 250g minced meat chicken, beef, or tofu. 2 tablespoons curry paste. 1 onion, thinly sliced. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 carrot, julienned. 2 cloves garlic, minced. 1 tablespoon vegetable oil. 2 tablespoons soy sauce. 1 tablespoon fish sauce. 1 teaspoon sugar. 1/4 cup coconut milk. Fresh cilantro leaves for garnish.
Instructions: In a wok or sizable skillet, heat the vegetable oil over medium-high heat. Add the onion slices and minced garlic, and saut until the onions are translucent and fragrant. When the minced meat or tofu is added, cook it through and brown it. Add the sugar, fish sauce, soy sauce, and curry paste and stir. Coat the meat in the curry paste by thoroughly mixing. Add the julienned carrot and the sliced red and green bell peppers. Stir-fry the veggies for three to four minutes, or until they start to get tender. After adding the coconut milk, cook for a further two to three minutes, or until the sauce slightly thickens. If necessary, add more soy sauce, fish sauce, or sugar after tasting to adjust the seasoning. Garnish with fresh cilantro leaves and serve hot. Savor your Stir-fried Minced Curry!
