MEUSLI FLAPJACKS
Ingredients
150g porridge oats
50g muesli*
80g demerara sugar
150g butter
50g honey *I use muesli with dried fruit/berries. If you're using plain muesli, you may like to substitute with approx 30g muesli and 25-30g raisins.
Instructions
Pre-heat the oven to 180C/350F/Gas Mark 4.
Melt the butter in a medium saucepan.
Add the sugar and honey (and raisins if using) and cook on low heat until the sugar has melted.
Turn off the heat, add the oats and muesli. Mix well.
Spoon the mixture into a shallow 20cm (8in) square cake tin and flatten down with the back of a spoon.
Bake for about 20 minutes until just browned.
Remove from oven and cut into 9 squares. The mixture will still be soft at this point but will harden when cooled.
