Ingredients: 1 lb flank steak, thinly sliced. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 yellow onion, sliced. 2 tbsp olive oil. Salt and pepper to taste. 1/2 cup salsa verde gluten-free. 8 gluten-free corn tortillas. Optional toppings: avocado slices, cilantro, lime wedges.
Instructions: In a large skillet, heat olive oil over medium-high heat. Add sliced steak to the skillet and season with salt and pepper. Cook until browned, about 3-4 minutes per side. Remove from skillet and set aside. In the same skillet, add sliced bell peppers and onions. Cook until softened, about 5-6 minutes. Return the cooked steak to the skillet and toss with the bell peppers and onions. Warm the corn tortillas in a separate skillet or in the microwave. To assemble the fajitas, place a spoonful of the steak and vegetable mixture onto each tortilla. Top with salsa verde and any optional toppings. Serve immediately and enjoy!
