This is a chili recipe that I made up, I got a basic idea from a few recipes but decided to create my own. First things first, you will need: 2 lbs ground beef, ground turkey or ground pork 1 huge can of crushed tomatoes (I think it's like a 28 oz can) 1 small can of tomato paste 1 regular sized can of diced tomatoes 2 green or red bell peppers 1 yellow or white onion 2 cloves of garlic 2-3 tablespoons of olive oil 2 jalapenos (more or less, depending on your preferable spiciness level) 2 regular sized cans of sweet corn NO BEANS. Toppings: sour cream, chopped tomatoes, cheese, salsa, pickled jalapenos, olives, chips, diced onions First: Chop up the bell peppers and onions. Mince the garlic cloves and deseed and dice up the jalapenos. Next: Saute all the chopped and diced veggies in a few tablespoons of olive oil in a large pot, add salt and pepper. And gather up the spices. Then: When the veggies are getting tender, add the 2 lbs of meat into the pan and cook that up. Add at least a few teaspoons of each spice into the pan and stir altogether. Don't forget salt and pepper! As the meat cooks up, it will be rendering a lot of fat, spoon out as much fat as you wish too. I believe fat adds flavor, so I leave a few tablespoons in it. Next: Add the can of crushed tomatoes, diced tomatoes (you can strain out the juice if you like), half the can of tomato paste and the 2 cans of corn (strained). Let it simmer for at least an hour. It will slowly thicken. Always check for seasonings. I say to start out with using a few teaspoons of each spice, but you can add more or less of whatever you like. My family loves spicy food, so I put lots of cayenne and chili pepper in mine, and cumin as well for smokiness. Lastly: Put some chips in a bowl and top with the chili! Top it with whatever you like.
