I love almost every single piece of Tales of the Jedi. For me (clone wars fan) it felt like almost perfect Star Wars.
Despite that, I think that the first episode flubbed up the easiest slam dunk you can have.
The way Ahsoka meets Plo Koon is well established. In the show, the very first episode Ahsoka is in after the movie, she says "It was him who found me and brought me to the temple..."
We see a little of that on one of the newsreel intros in season one (I think it's the pilot). We see a toddler Ahsoka looking up at Plo Koon as he kneels down to her in a hut, surrounded by other Togruta.
In some behind the scenes and later Ahsoka by E. K Johnston, we learn that there had been a slaver (Filoni's sketch is a Zygerrian) that had intercepted a signal exchanged between the Jedi and Shili (the Togruta homeworld) and went to try to kidnap (and enslave) Ahsoka under the guise of a Jedi himself. The book describes him as charismatic and convincing, especially compared to the intimidating Kel Dor that is Plo Koon, but Ahsoka initially distrusts the slaver and trusts Plo Koon, even as no one else does, implying it's because of their connection to the force.
There are so many reasons why this would be better than the "baby bonds with scary animal" plotline that they went with, but the main one, from a creators view, are that it's already written! It's in the book that they are already adapting another episode from, and this time you get to have Plo Koon, Filoni's favorite Jedi, come back and interact with Ahsoka, and you still get to have a cute episode. You can even still have Ahsoka's mom and the wise woman, and the entire intro sequence until she was born can stay. It's an easy win, and a needed change. You can't have the first episode of a show, no matter how short, be the worst one, or else you risk people being turned off it.
Anyway, I just think that pretty much anyone could have thought of it. I do love the series to death, and seeing Shili at all was great, as well as an Akul.

I had the idea of Obi-Wan Kenobi and Plo Koon stealing Ahsoka from Anakin and I think it is so freaking adorable! Like hear me out okay, they just want to spend more time with her and they adore her, I love seeing Ahsoka forming closer bonds with 212th and Plo's Wolf pack. That would be so endearing to see. Anakin coming back from a mission realizing Obi-Wan or Master Plo have stolen his padawan again is everything. He might think they do that because they don't trust Ahsoka with Anakin or don't approve of his teaching methods but all the while both of Ahsoka's other dads just want to spend more time with her.
I would've loved to see the same thing for Count Dooku and Obi-Wan, Dooku wanting to spend more time with him and loving Obi-Wan even more than Qui-Gon himself would have added ten years to my life span. Obi-Wan deserves all the love he can get okay? Dooku constantly giving him compliments and saying that he is proud of Obi-Wan and would've liked to have him as his padawan is EVERYTHING, like imagine If those two had a closer bond, Obi-Wan might've been able to save him in the end of the clone wars.
I know attachments aren't allowed and all but these self indulgent ideas are swarming inside my brain and won't let me sleep, not that I'm complaining ofcourse.

With Dave mentioning that Plo Koon concepts were made to conceal Luke’s appearance in the Mandalorian, it got me thinking about how things might have gone if Plo had survived and given Luke some additional training, maybe post-Endor.
“You seem to grasp the basics well, Jedi Skywalker, but you lack finesse. Let us work on that.”
“Of course, Master Plo. I’m sure I could use the training.”
“Interesting. A Skywalker who takes criticism and orders with respect.”
And maybe Plo decides Luke could use some history and philosophy lessons as well. After all, Luke may be a Jedi Knight by this point, but if he’s going to rebuild the Jedi Order, he needs more than the barebones basics Yoda taught him. And maybe there’s a good natured disagreement over Luke’s humility regarding his shortened training schedule, where Plo insists that Luke was going to start training Jedi the day after Endor.
“It is most fortunate that I found you when I did, young Luke. I’m sure that Masters Kenobi and Yoda had their reasons for abbreviating your training, but with the Emperor dead and the Sith defeated, there is much to learn before you are ready to train an apprentice of your own.”
“I did mention that I was searching for holocrons and Jedi texts before we met, didn’t I, Master Plo?”
“I’m certain you did. Now, recite to me the details of the Jedi Civil War.”
And imagine, for weeks, Plo keeps expecting Luke’s inner-Anakin to pop up. A moment of bragging, or impatience, or aggression, in response to a difficult situation, but it never happens. And Plo is wondering about this when Leia and Han happen by. Five minutes after meeting Leia, Plo turns to Luke.
“Senator Organa Solo, you take after your father a great deal more than your brother does.”
Unfortunately for him, Leia has not at this point fully accepted Vader as Anakin. After Leia has finished her tirade and is out of earshot, Plo turns to Luke again.
“Perhaps I was mistaken. She takes almost entirely after Anakin Skywalker.”
