Ingredients:

12 slices bacon

3 to 4 potatoes (depends how big they are and if you want more potato or spinach to shine through)

2 garlic cloves

10 to 16 oz spinach (again, r u aiming to be canada’s food guide or the next popeye? i went with closer to popeye)

Salt and seasonings to taste (I used about 1/2 tsp salt, 1/4 tsp cayenne, and 1/2 tsp black pepper)

Directions:

Cook bacon and let cool on paper towels. Keep bacon fat in pan.

Pulse potatoes in a food processor to get that hash browns texture. Mince and cook garlic in bacon fat with salt and seasonings (I used black pepper and chili powder).

Add potatoes to pan and cook for about 10 min on medium high. Set aside.

Steam spinach. Meanwhile, chop up cooled bacon.

Mix potatoes, spinach, and bacon together in a large bowl/tupperware.
