Grandma Sally's Mandel Bread
Grandma Sally was not my Grandma but she was my friend Joy’s Grandma. Joy is a friend of mine and has been such a great supporter of Cooking with Candi. I know what a good cook she is and she sent me this recipe and was kind enough to share her family’s secret to an awesome mandel bread. She sent it to me a while back and I haven’t been able to test it out until now. I highly recommend this…

You'll love these crunchy biscotti-type cookies. Add almonds mandeln or maraschino cherries for variety. We gave these as teacher gifts last year and got lots of compliments!
Mandelbroit No. 3 (aka Mandel Bread)
Type: dessert, kosher, parve, vegetarian
Ingredients:
3 eggs
1 cup sugar
½ cup oil
2½ to 3 cups all purpose flour
1¼ cups slivered almonds
2 teaspoons baking powder
Rind of 1 lemon or ½ orange
Tools & Utensils:
Mixer/whisk
Spatula/scraper
Baking paper
Oven
Instructions:
Beat eggs until light.
Add sugar gradually and beat together.
Add oil and beat well.
Fold in sifted dry ingredients, one cup at a time, alternating with almonds.
Add rind.
Form into rolls, place on lightly greased cookie sheet and bake at 350°F/176°C for 15 to 20 minutes or until done.
Cut in slices while warm.
Return to oven until lightly toasted on both sides.

Mandelbroit No. 2 (aka Mandel Bread)
Type: dessert, kosher, parve, vegetarian
Ingredients:
4 cups flour, sifted
4 teaspoons baking powder
3 eggs
1 cup sugar
Cinnamon
1/2 cup oil*
1/2 cup spry*
3/4 cup orange juice
Lemon rind
Walnut quarters**
* 1 cup oil or 1 cup spry may be substituted.
** Jelly may be substituted.
Tools & Utensils:
Rolling pin
Oven
Instructions:
Combine all ingredients except 1 egg, cinnamon, and walnut quarters to make a dough.
Roll dough out to about 3/4 inch thickness. (About 2cm)
About 2 inches (5cm) up from bottom, sprinkle a strip of walnut quarters.
Repeat strips of nuts every 2 inches (5cm) or so up to the top of the dough.
Sprinkle with cinnamon, then roll.
Beat 1 egg and brush top of roll with pastry brush.
Sprinkle top with cinnamon.
Place on greased cooky tin.
Bake at 375°F/190°C for 20 minutes.
Cut in diagonal pieces about 1 inch (2.5cm) thick.

Mixer/whisk
Baking paper
Oven
Instructions:
Beat eggs, add sugar gradually;
add oil, dry ingredients, and almonds.
Form two loaves and bake for 20 minutes at 375°F/190°C.
Then slice and return to oven to brown on either side.

12/10/23 - Lago Vista, TX - LONGTIME HOUSTON FRIENDS - Meet Stan & Jan. We’ve known them since our kids went to elementary school together in Sugar Land, a suburb of Houston. I’ll never forget Jan’s tough love approach resulting in the sale of our house at asking price in three days flat and also, Stan helping us find a 12th floor corner apartment at the iconic Rice Hotel in downtown Houston. And not to be forgotten, Jan’s parting gift of Mandel Bread every time we get together: including today. Looking forward to some good snacking the next couple of days. Life is good!
