Wait do you roast garlic every few months and use it until it runs out? If you donât mind me asking - how do you preserve it? (Do you preserve it?)
Yes! I freeze it. :) Realistically I do it about three times a year, generally twice in winter and once at the start of summer.Â
I roast usually 3-5 heads of garlic by cutting the bottoms off (to expose most of the cloves), dunking the cut bottom in oil, then roasting wrapped in foil. When still warm, I squeeze the cooked cloves out into a bowl, then mash them all into a paste. I used to freeze them in a designated ice cube tray, but these days usually I put the paste into a plastic bag with the corner snipped off and âpipeâ clove-sized blobs onto a sheet of parchment. That goes into the freezer, and once frozen I package the âclovesâ into a tupperware, layered with parchment or plastic wrap.Â
I usually keep about five clovesâ worth in the fridge, for casual cooking. For anything using a bunch of garlic, Iâll set out some cloves to defrost beforehand. I donât use garlic a whole ton in my cooking, so it works well to have very mild, pre-cooked garlic, stashed in the freezer, ready to use when I need it. You can use roasted garlic in nearly everything that calls for fresh, you just skip the âsauteeâ step if there is one, or add it in at the end of whateverâs cooking. I use it mostly in pizza sauce, focaccia, and burgers, but sometimes Iâll just throw a clove or two into a little bowl, top off with oil, and use it for dipping bread. Â
