Maamoul (Date & Nut Cookies)
pistachio-filled maamoul
300g flour
125g yogurt/labneh (½c)
55g butter, softened (¼c)
100g sugar
1 large egg
1c pistachios, ground
1tb sugar
1tsp olive oil
½tsp cinnamon
powdered sugar for dusting
grind pistachios using a mortar & pestle, or a food processor
add the 1tb sugar, olive oil, & cinnamon, mix fully & set aside
preheat oven to 325F
cream together butter, yogurt, sugar, & egg until fully combined
sift in flour & mix until the dough comes together
take about ¾tb ball of dough & press into a large, flat, thin round
hold the dough in one hand & add about 1tsp of the pistachio filling into the center
seal up the dough around the filling, pinching the edges to seal well
roll back into a ball shape between your hands
dust your mold with powdered sugar, then press the dough into the mold
hold one hand at the edge of the counter & bang the top of the mold on the edge to get the dough to release & fall into your hand
repeat steps 6-11 with the rest of the dough & filling, redusting the mold after 1-2 cookies
set on a lined/greased baking sheet & bake for about 20min, until the edges & bottoms are golden but the tops are still pale
let cool on the baking sheet & enjoy! ♡
