A delicious and low-point Egg Drop Soup with Chicken made in a pressure cooker. This quick and easy recipe is perfect for a comforting and satisfying meal.
Ingredients: 4 cups chicken broth. 1 cup cooked chicken, shredded. 2 eggs, beaten. 2 green onions, thinly sliced. 1 tablespoon soy sauce. 1 teaspoon sesame oil. 1/2 teaspoon ginger, minced. 1/2 teaspoon garlic powder. Salt and pepper to taste.
Instructions: In the pressure cooker, combine chicken broth, shredded chicken, soy sauce, sesame oil, ginger, and garlic powder. Lock the lid and set the pressure cooker to high pressure for 5 minutes. Once the cooking is complete, perform a quick pressure release. Open the lid and stir in the beaten eggs, green onions, salt, and pepper. Set the pressure cooker to saut mode and cook for an additional 2-3 minutes until the eggs are fully cooked and the soup is heated through. Serve hot and garnish with extra green onions if desired.
