A Witch needs Goodwill with the spirits first: usually through doing rituals, gift-giving, and words for praise.
After, a Witch has to communicate their intention well with the spirits. The spirits are like genies, the more left up to chance, the more the spirits will try to create chaos. Light this candle is a very clear directive and thus a very easy spell. Set it on fire is not so clear and might result in more than they bargained for.
A spell done through a ritual is usually a more complex spell, in order to get the intention just right, the ritual set up fills in a lot of the details already. Sometimes it needs more Witches than just one, and it is more likely to be irreversible.
Most traditional witches don't agree with this way, but it's not something that's easy to control. It especially happens to young witches, a five year old throwing a tantrum and setting furniture on fire, or a witch grieving making it rain locally. The spirits are beings of chaos and they react well to chaos. The outcome can be muddled, as intentions aren't very clear when someone is in the height of their emotions. Witches that use this way are often the most chaotic ones.
