A delicious and healthy Paleo recipe that combines the flavors of balsamic grilled chicken with the freshness of a Caprese salad. Perfect for a light and satisfying meal!
Ingredients: 4 boneless, skinless chicken breasts. 1/2 cup balsamic vinegar. 1/4 cup olive oil. 2 cloves garlic, minced. Salt and pepper to taste. 4 large tomatoes, sliced. 8 ounces fresh mozzarella cheese, sliced. 1/2 cup fresh basil leaves. Balsamic glaze for drizzling optional.
Instructions: In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper to create the marinade. Place chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or ideally, marinate overnight. Preheat your grill to medium-high heat and oil the grates to prevent sticking. Remove chicken from the marinade, allowing excess to drip off, and grill for 6-7 minutes per side, or until the internal temperature reaches 165F 75C. While the chicken is grilling, arrange tomato, mozzarella, and basil slices on a serving platter. Once the chicken is cooked, place it on top of the tomato, mozzarella, and basil slices to slightly melt the cheese. Drizzle with balsamic glaze if desired.
