Ingredients: 1 cup uncooked rice. 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces. 1 can 10.5 oz condensed cream of chicken soup. 1 can 10.5 oz condensed cheddar cheese soup. 1 cup chicken broth. 1/2 cup diced onion. 1/2 cup diced bell pepper. 1 cup shredded cheddar cheese. Salt and pepper to taste.
Instructions: In a slow cooker, combine rice, chicken, cream of chicken soup, cheddar cheese soup, chicken broth, onion, and bell pepper. Mix well. Season with salt and pepper to taste. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and rice is tender. During the last 30 minutes of cooking, sprinkle shredded cheddar cheese over the top.
