Ingredients: 1/2 cup of all-purpose flour. 1/4 cup of unsweetened cocoa powder. 1/2 cup of granulated sugar. 1/4 cup of unsalted butter. 2 large eggs. 1 teaspoon of vanilla extract. 1/4 teaspoon of salt. 4 pieces of chocolate truffles or chunks.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a microwave-safe bowl, melt the butter and chocolate chunks together in 30-second increments until smooth. Let it cool slightly. In a separate bowl, whisk together the eggs, sugar, and vanilla extract until well combined. Slowly add the melted chocolate mixture to the egg mixture, stirring constantly. Sift in the flour, cocoa powder, and salt. Gently fold until just combined; do not overmix. Spoon the batter into the muffin tin, filling each cup halfway. Place a chocolate truffle or chunk in the center of each muffin cup and cover with more batter until about 2/3 full. Bake in the preheated oven for 12-15 minutes, or until the muffins have set around the edges but still have a soft center. Allow the muffins to cool for a few minutes before serving. The lava center should be gooey and delicious!
