Tonight's delight: some of that delightfully easy Instant Pot macaroni and cheese, using some of the grated Swedish Mystery Cheese.
On the side, to help round things out: finishing up a few yummy Balkan spicy beef smoked sausages we had lurking in the fridge. Another case where I asked him to play fry cook while I was readying up the macaroni on the other end of the kitchen. Yay teamwork! 😎
Plus, I couldn't resist finally simmering up some low spoons vaguely Mediterranean style zucchini and tomatoes (by the same basic method as this), using some zucchini which has been waiting for me in the fridge for a while now. Was originally thinking of just sauteing it in some olive oil with onion and garlic, but decided to reach for the canned tomatoes instead because just covering it up and simmering it takes a lot less attention.
One old favorite my mom used to make, though I do add some olive oil for extra yum. (Though I didn't bother with lightly frying the onion and garlic first this time. Truer to her version! 😁) This batch ended up getting some dried dill instead of the usual more Italian style herb(s) of your choice, because I realized we didn't have any yet. So, more vaguely Greek inspired? 😅 The flavors did work pretty well together.
Any leftovers should be great either on their own, or thrown on some quick rice/pasta. Which I may well do tomorrow.
This is actually the first macaroni and cheese OR any kind of squash I've made in way too long. First proper cooking in a while, for that matter, and I was really overdue a home-cooked comfort food meal!
It did not disappoint. Mr. C seemed pretty enthusiastic about everything but the zucchini, but I wasn't expecting him to want any of that. Sadly, I am the only real squash fan around here, though he will eat it as part of other dishes.
