Super easy, deals opus meal on a night when it's only dinner for one 🤗 My breaded eggplant recipe is already on the blog, but here are the instructions to get saucy 🍋 Lemon-Garlic-Oregano Sauce: • 1/2 fresh squeezed lemon • 1/2 tsp fresh oregano • 1 garlic clove, minced • 1/4 c olive oil • salt & pepper, to taste 1. Whisk ingredients together, thoroughly. 2. Ideally, you refrigerate the sauce before use. But if you're short on time like me - give it a good shake and pour it over a fork, on to the rest of the meal. This will give it a good mix so all of those delectable ingredients will make for the happiest of tastebuds 😋 Also can't wait to try this as a salad dressing! Lemon is filled with loads of nutritional benefits - vitamin C, B6, A, E, is an antioxidant and has cancer fighting properties... I could go on & on...
