So how many powers does Jack-Jack canonically have?
Here's a list of each power in the order that they are seen in the two films and two mini-movies.
Jack-Jack Attack 1. Teleportation: moving immediately from one location to another 2. Gravity manipulation: allowing him to float, sit on ceiling 3. Abnormally strong teeth: allowing him to bite through his crib (subset of demon baby?) 4. Ability to phase through solid objects 5. Morphic ability: transform into fire 6. Ability to produce lasers from eyes, either continuously, or in "blaster" mode later on
The Incredibles 7. Morphic ability: transform into metal 8. Morphic ability: transform into demon
Incredibles 2 9. Telekinesis: seen in ability to move the garbage can cover and later Helen's goggles 10. Likely indestructible like Bob: Bob mentions there's not a scratch on him after the raccoon fight 11. Morphic ability: transform into goo 12. Multiplication: ability to produce up to about a dozen copies of himself 13. Ability to produce lightning-type energy: the lightning effect surges around him but he doesn't seem to be able to channel this energy himself 14. Ability to rocket through air: this one also seems unintentional, as it's only initiated by Jack-Jack sneezing 16. Ability to travel through and remain in alternate dimensions: subset of teleportation 17. Imitation: ability to transform physically into other people, but in addition Jack-Jack also imitates their mannerisms
Auntie Edna 18. Speedster abilities like Dash: seen only briefly when he's stacking the blocks at Edna's house 19. Size transfiguration: able to grow 20. Size transfiguration: able to shrink 21. Morphic ability: transform into fog/mist 22. Morphic ability: transform into water 23. Firework effect: perhaps a combo of fire baby and lightning baby? Edna seems to call it electromagnetism
There may also be an undefined element of Superhuman intellect. We see that Jack-Jack has the ability to perceive and respond to threats and strategize at a rate unheard of in normal babies. He also seems to possess a higher level of spatial reasoning and design abilities (seen in his building the mannequin at Edna's house) So what’s the final count? Depends on how you group the powers. I really don’t think he technically has 17+ different powers. The ability to transform into other things (fire, lead, water, mist, goo, or a demon), to grow/shrink, and the ability to imitate other people all fall under the category of “morphic abilities.” It’s appropriate that Edna deems him a Polymorph because yes, he does have multiple powers, but his main power also seems to be this morphic ability, which encompasses many of his individual powers. (Let me know if I missed any powers, or if you have other ideas for how to categorize or count the number of powers Jack-Jack has!)
Okay Incredibles 2 was awesome and all...
but why was every previous instance of Jack-Jack displaying powers ignored?
After interrogating Kari, in the short film Jack-Jack Attack, surely Dicker might have felt obligated to tell them what he heard from Kari?
I mean sure maybe not everyone saw Jack-Jack Attack but he did display powers in the first movie.
Also why did his laser eyes change colour?

Moe Baby Blues Season 14 - Episode 22 | May 18, 2003 Here’s an okay one. Moe is about to off himself but he accidentally saves Maggie from certain death, bonding the two of them. The Simpsons have him act as Maggie’s full-time babysitter, but he becomes creepily possessive of her. I guess good episodes from bad seasons are usually marked by a lack of bad jokes rather than an abundance of bad ones. I always considered this to be a high point in season 14, but really it’s not THAT funny/touching/whatever they were going for. Also you have to accept the fact that Moe is in full-blown sadsack mode here. I wish they’d bring the nastiness of his character back. Lonelyheart Moe is a weaker Moe. THE B-SODE:
Jack-Jack Attack Short Film | March 15, 2005 Not quite the same thing, but it revolves around a babysitting situation that gets A LITTLE OUT OF HAND!!!!! This is a companion to Disney Pixar’s The Incredibles 1, taking places during the film. It depicts a babysitting sesh as Jack-Jack (that’s the kid’s actual name, right?) begins exhibiting super powers but being a baby doesn’t really know how to control them. This is a legitimately excellent short film. There are moments of sheer terror in it that are legitimately funny. I actually saw this before watching The Incredibles First Movie, which I knew was about superhero shit, so the context softens moments like when the baby bursts into flames in front of a terrified teenage girl. This short should get more credit for being a really great stand-alone cartoon.

Kari: (sees big "S" on Syndrome's super suit) "What does the 'S' stand for?"
Syndrome: "Uhhh...Sitter. Yeah, Sitter! Originally I was going to have initials for Baby-Sitter, but then I would've had to go around wearing a big 'B.S.,' and...you understand why I couldn't do that!"
Ten-year-old me: Um, I don't get it...what's wrong the initials "B.S."?
