On hot summer days, these layered ice cream pops are a great treat. The layers of rich chocolate and creamy vanilla ice cream, crunchy cookies, and gooey melted chocolate will make them a hit with kids and adults alike.
Ingredients: 2 cups vanilla ice cream. 2 cups chocolate ice cream. 1/2 cup crushed cookies. 1/4 cup melted chocolate chips. 1/4 cup chopped nuts. Popsicle sticks or wooden skewers.
Instructions: Put parchment paper around the edges of a small baking dish. Cover the dish with a layer of vanilla ice cream and freeze it until it gets firm. To make the cookie layer firmer, spread a layer of crushed cookies on top of it and press down gently. After putting the cookie layer down, melt the chocolate and sprinkle chopped nuts on top. Fridge the dish again until the chocolate layer is firm. After the chocolate-nut layer is set, add a layer of chocolate ice cream on top of it and freeze until firm. Put popsicle sticks or wooden skewers through the layers of ice cream, and then cut the ice cream into squares or rectangles. You can eat it right away or put it in the freezer until you're ready to eat it.
