I mean, that's pretty much it. Honestly, it's not even a fully formed thought. I just don't think that Zuko, given the best of all outcomes, would be naturally grumpy. His personality is the result of a lot of trauma at the hands of people he was supposed to be able to trust, and I think he would out grow it once he got some space to heal. The impression I get is that he would have been more of an introvert than a grump. Not anti-social, but content to spend a quiet evening at home with a cup of tea and a good book (or writing one). Katara would have been the extrovert that adopted him and got him in on some wild schemes involving her particular brand of social justice. He would love every second of it, but also, this would be him afterwards
