With its crispy hash brown crust, this Easter quiche is a tasty addition to your holiday brunch. This dish is great for any event because it has ham, peppers, onions, and cheddar cheese.
Ingredients: 2 cups frozen hash browns, thawed and drained. 3 tablespoons melted butter. 1 cup diced ham. 1 cup shredded cheddar cheese. 1/2 cup diced bell peppers. 1/4 cup diced onions. 4 large eggs. 1 cup milk. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon paprika. 1/4 teaspoon dried thyme. 1/4 teaspoon dried parsley. Cooking spray.
Instructions: Preheat your oven to 375F 190C. In a bowl, mix the thawed hash browns with melted butter. Press the hash brown mixture into the bottom and up the sides of a greased 9-inch pie dish to create a crust. Use a spatula to pack it down firmly. Bake the hash brown crust for 20 minutes or until it starts to turn golden brown. In a skillet, cook the diced ham until it's lightly browned. Set aside. In a separate skillet, saut the diced bell peppers and onions until they're tender. Set aside. In a mixing bowl, whisk together the eggs, milk, salt, black pepper, paprika, dried thyme, and dried parsley. Layer the cooked ham, sauted bell peppers, and onions on top of the hash brown crust. Sprinkle shredded cheddar cheese evenly over the fillings. Pour the egg mixture over everything in the pie dish. Bake the quiche in the preheated oven for 30-35 minutes or until the center is set and the top is golden brown. Allow the quiche to cool for a few minutes before slicing and serving.
