These coconut snow clouds are light, airy, and gluten-free, making them a perfect sweet treat for those with dietary restrictions. They're delicately sweetened with honey or maple syrup and have a hint of vanilla flavor.
Ingredients: 3 cups shredded coconut. 1/2 cup coconut cream. 1/4 cup honey or maple syrup. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: Preheat oven to 300F 150C. Line a baking sheet with parchment paper. In a mixing bowl, combine shredded coconut, coconut cream, honey or maple syrup, vanilla extract, and a pinch of salt. Mix until well combined. Using a spoon or cookie scoop, form the mixture into small cloud-like shapes and place them on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until the coconut clouds are lightly golden brown on the edges. Remove from the oven and let cool completely on the baking sheet. Once cooled, carefully transfer the coconut snow clouds to a serving platter. Enjoy!
