Revelations Over Ginger Snaps
It all began when I took a bite of a store bought ginger snap. As the sweet, spicy goodness was crunching in my mouth, it somehow conjured ideas of me using the oven and a mixing bowl to create the perfect homemade version of the cookie. So I set out to do just that. I quickly glanced over a few recipes and thought it was easy enough. How hard can mixing flour, sugar, and water together be? Just add some ginger juice and voila, ginger snap in a snap!
I took out a few ingredients because I felt guilty about adding sugar and butter into the bowl. Plus I chose not to add baking powder because… I did not have any. How much does a half tea spoon of something really contribute to the makings of a cookie? I just added extra baking soda since I had a whole box full. I also added extra vanilla extract since the smell is one of my most favorite things. Anyway, the whole process of mixing ingredients together took a little less than two hours. I held my confidence. After all, I’m new at this.
Although, I must admit I was a little concerned when I pulled the batch from the oven. It didn’t resemble anything like a cookie. The dough balls lost it’s shape. It seemed to have melted and spread across the baking sheet. Maybe I shouldn’t have used olive oil instead of butter? Neverless, I remained hopeful. After all, aren’t I suppose to wait for the cookies to cool? It should pull itself together into the shape of a cookie if I leave it alone for 10 minutes.
I gave it 20 minutes just to be safe. However, it still resembled a giant wafer of some sort. I was a little disappointed but then I remembered that this is a ginger snap cookie; it is suppose to be thin and crispy. I have never seen a ginger snap this thin before, but maybe that could be my signature. Ginger wafers.
I called my sister over to have a taste test. Of course I trimmed the ginger wafer down a bit. Presentation is everything. After my sister took a bite, her eyes grew big in excitement. With a mouth full of ginger wafer, she managed to say “yum.”
Victory! Just to confirm my success and to boost my ego I asked a superfluous follow up: “you like it?”
Response: “Mmhmm, taste like bacon!”
