It has a nice light oakey flavor which isn’t overpowering, as oak sometimes can be. Unsweetened, unfiltered, unpasteurized, it referments in the bottle and can be stored up to twenty years. @brouwerij_boon Brewed in Lembeek, the village that gave Lambic beers it's name. I am hoping to store this bottle for another 10 years! . Boon Geuze Mariage Parfait is one of the finest examples of the traditional 100% spontaneous fermentation Lambic style which, probably is the oldest brewing method in the world. The process involves letting the fermentation take over by the yeast in it's natural surroundings. Belgian lambic beers are left in open vats where wild yeast and bacteria take control of the fermentation process. .
