Instructions: Preheat the oven to 325F 160C. Season the beef brisket with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the brisket on all sides until browned, about 5 minutes per side. Remove the brisket from the Dutch oven and set aside. In the same Dutch oven, saut the chopped onion and garlic until softened, about 5 minutes. Stir in the tomato paste, brown sugar, thyme, and rosemary, cooking for another 2 minutes. Pour in the Merlot wine and beef broth, scraping up any browned bits from the bottom of the pot. Add the prunes and bring the mixture to a simmer. Return the brisket to the pot, cover with a lid, and transfer to the preheated oven. Bake for 3-4 hours, or until the brisket is fork-tender. Remove the brisket from the oven and let it rest for 10-15 minutes before slicing. Serve the sliced brisket with the Merlot and prune sauce spooned over the top.
