Ingredients: 1 batch of Genius Chickpea Tofu. 4 cups mixed greens. 1 cucumber, sliced. 1 cup cherry tomatoes, halved. 1/2 red onion, thinly sliced. 1/4 cup Kalamata olives, pitted. 1/4 cup crumbled feta cheese. 2 tablespoons olive oil. 2 tablespoons balsamic vinegar. 1 teaspoon Dijon mustard. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Follow the recipe's steps to make the Genius Chickpea Tofu, then cut it into small cubes that are easy to eat. Put the mixed greens, cheese crumbles, cherry tomatoes, red onion slices, cucumber slices, and Kalamata olives in a large salad bowl. To make the salad dressing, mix the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper in a small bowl with a paper towel.
