Creamy avocado, juicy tomato, and fresh spinach are all tucked between slices of soft vegan brioche bread in this delicious Vegan Avocado Brioche sandwich. It's great for a quick and filling meal.
Ingredients: 1 ripe avocado. 1 tablespoon lemon juice. 2 slices vegan brioche bread. 1 small tomato, sliced. Handful of spinach leaves. Salt and pepper to taste.
Instructions: Put the ripe avocado and lemon juice in a small bowl and mash them together until they are smooth. Add pepper and salt to taste. Warm up the vegan brioche slices until they are just barely golden. Cover each toasted brioche slice with an equal amount of the avocado mixture that has been mashed. On top of the avocado mixture, put the spinach leaves and sliced tomato. Use the rest of the brioche slices to close the sandwiches. Serve right away and enjoy!
