This vegan and gluten-free strawberry banana bread is moist and tastes great. Great for a fruity and sweet treat!
Ingredients: 2 ripe bananas, mashed. 1 cup gluten-free all-purpose flour. 1/2 cup almond flour. 1/2 cup coconut sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup unsweetened almond milk. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. 1 cup fresh strawberries, diced. 1/4 cup chopped walnuts optional. 1 tbsp ground flaxseed mixed with 3 tbsp water as egg replacement.
Instructions: Warm up the oven to 350 F 175C and either grease or line a loaf pan with parchment paper. Mix the flaxseeds together in a small bowl, then set it aside for five minutes to gel. Put mashed bananas, almond milk, melted coconut oil, vanilla extract, and the flaxseed mixture in a large bowl. All-purpose gluten-free flour, almond flour, coconut sugar, baking powder, baking soda, and salt should all be mixed together in a different bowl using a whisk. Slowly add the dry ingredients to the wet ones and mix them together until they are well mixed. Add the chopped walnuts and diced strawberries if using slowly. Spread out the batter in the loaf pan that has been prepared. After the oven is hot, bake it for 50 to 60 minutes, or until a toothpick stuck in the middle comes out clean. The strawberry banana bread should cool in the pan for 10 minutes before being moved to a wire rack to cool all the way down. Cut your vegan gluten-free strawberry banana bread into slices and enjoy it once it's cool.
