A tasty salad with grilled potatoes, crunchy vegetables, and a Dijon dressing that is thick and smooth.
Ingredients: 4 medium-sized potatoes. 2 tablespoons olive oil. Salt and pepper to taste. 1/2 cup red onion, finely chopped. 1/2 cup celery, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup mayonnaise. 2 tablespoons Dijon mustard. 2 tablespoons red wine vinegar. 1 teaspoon honey. 1/2 teaspoon paprika. 1/4 teaspoon garlic powder. 1/4 cup crumbled feta cheese optional.
Instructions: Warm up the grill over medium-high heat. Make sure to wash and scrub the potatoes well. Cut them into slices that are 1 inch thick. Add the potato slices to a large bowl and season with salt and pepper. The potato slices should be grilled for four to five minutes on each side, or until they are soft and have grill marks. To cool down, take the potatoes off the grill and set them on a flat surface. Cut up the red onion, celery, and parsley and put them in a different bowl. Pour the dressing into a small bowl and mix the Dijon mustard, honey, paprika, garlic powder, and red wine vinegar with a whisk. Put the grilled potatoes in the bowl with the other vegetables, and then pour the dressing over them. Toss everything to cover it all. For extra flavor, you can sprinkle crumbled feta cheese on top if you want to. Put the potato salad in the fridge for at least 30 minutes before you serve it.
