Red Grape Kale Quinoa Salad

Sooooo healthy - kale, quinoa, parsley, mint, red grapes, etc. and something special to take to summer barbecues or picnics as the hit of the meal! Great for the diabetics in the crowd, too!
2 c. quinoa, frozen, defrosted
1/4 t. sea salt, divided
1/4 c. lemon juice
1/2 t. cumin
1/4 t. coriander
pinch crushed red pepper flakes
1/2 c. olive oil
2 c. kale, finely chopped*
1/4 c. mint, fresh finely chopped*
1/4 c. parsley, chopped*
1 t. lemon zest
1/4 c. red grapes, seedless, halved**
*Use kitchen scissors to speed chopping.
**I like this with twice the amount of grapes or more!
Whisk together lemon, salt, cumin, coriander, red pepper flakes, and olive oil in a large bowl. Add kale and give it a quick massage with your hands. Add quinoa, mint, parsley, lemon zest, and grapes, toss lightly to combine. Serve at room temperature, on a bed of greens if you like.
