Leon's Easy Fried Cabbage
Delectable cowtown fare!
1 onion, chopped
3 tbsp bacon drippings (or veg. oil)
4 cups chopped or shredded cabbage
Salt, pepper, sugar, nutmeg and a dash of vinegar to taste.
Saute onion in oil for three minutes. Add cabbage and saute for five minutes, stirring frequently. Add seasonings. Cover and allow to steam for five more minutes.
Makes four servings.

Tonight's delight!
I had an urge to fix a decent meal again, with plenty of fresh comfort food ingredients after the last grocery delivery. (Funny how that works! 🙄) Not the highest on spoons today, especially with a bit of a migraine probably from the weather. But, I needed some kind of hot vaguely balanced food.
I finally put together that homemade pseudo-sausage earlier, so just cooked half of it in a little butter because the preground meat is so lean. That was something easy that we had, and I've really been wanting some.
With that set to the side to reheat a little later, I just went ahead and cooked some cabbage in the same pan for extra yum, with a little extra butter because it actually needed some.
The cabbage went in after frying the onion until I could smell it just starting to brown. 😋
In the meantime, a batch of the extra-easy baked macaroni and cheese was doing its thing in the oven. Because I just couldn't resist today.
I forgot to get a pic when it came out of the oven, but yeah this batch could have turned out better. (Though the sprinkle of packaged crispy fried onions on the top with the finishing layer of cheese near the end was an excellent addition!)
This was using a shallower pan I hadn't baked any of that in before, covered with foil instead of a better-fitting lid. I actually had to stir it around some and add extra (hot) liquid partway through cooking, and bake it like half an hour longer because of that--and it still turned out on the drier side!
Everything still ended up tasting pretty good overall, though. If not so colorful. 😅
Satisfying supper.
(And I will probably try to pimp that dry-ass leftover macaroni by baking it again with some tomato sauce or something later! There is plenty left, since it wasn't a small batch and Mr C didn't even go back for more tonight. Ah well, hopefully I'll remember next time. ¯\_(ツ)_/¯)
