Fried rice to use up the last couple bites of kimchi and wilting fridge veggies! Delicious, will absolutely make again. I wasn't sure about the cold avocado topping or the celery, but both turned out great. Also, the best possible version, I think, would involve pork of some kind, but this is great vegetarian too.
