In Breath of the Wild, Eryck can be found in Rabia Plains by a campfire.

He's lost, so he decided to just chill here for the rest of the game. It's possible you arrived here directly after Kakariko Village on your way to Zora's Domain on a first playthrough, and he does lead us the right way.

Well, we can't all be the chosen one.

In Tears of the Kingdom, he seems to have found his way, as he has become a traveling merchant.

He even has a cart!

I saw him frequent Faron Woods and Highland Stable area.

He doesn't do much else as a merchant, but at least he found himself a job! Aiding the hero is a noble profession in Hyrule.
