Avocado Bruschetta with Balsamic Reduction is a delightful appetizer that combines creamy avocado, fresh tomatoes, and a sweet balsamic reduction on crispy baguette slices. It's perfect for parties or as a light and flavorful snack.
Ingredients: 2 ripe avocados. 1 baguette. 1/4 cup balsamic vinegar. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 cup cherry tomatoes, halved. 1/4 cup red onion, finely chopped. 2 tablespoons fresh basil, chopped. Salt and pepper to taste.
Instructions: Start by heating the oven to 350F 175C. Put the baguette slices on a baking sheet, making sure each one is about 1/2 inch thick. Put them in the oven and toast them for five minutes, or until they are golden brown and crispy. Take it out of the oven and set it aside. Set the balsamic vinegar in a small saucepan and heat it over medium-high heat. Bring it to a boil, then turn down the heat. Simmer for 10 to 15 minutes, or until half of the vinegar is gone and the mixture is thick like syrup. Take it off the heat and let it cool down. Cut the avocados in half, take out the pit, and scoop out the flesh into a bowl. Put the garlic powder on top of the avocado and mash it up with a fork. Add salt and pepper to taste and mix well. Put the cherry tomatoes, red onion, and chopped basil in a different bowl. Add some olive oil and salt and pepper to taste. To make the bruschetta, spread a lot of the avocado mixture on each slice of toasted bread. Put the tomato and onion mix on top of the avocado. Spread the balsamic reduction on top of the bruschetta. Serve right away and enjoy!
