A hearty and delicious breakfast sandwich packed with nutritious veggies, creamy avocado, gooey cheese, and perfectly cooked eggs, all nestled between toasted English muffin halves.
Ingredients: 1 English muffin, split and toasted. 1 tablespoon olive oil. 2 large eggs. 2 slices of cheddar cheese. 1/2 avocado, sliced. 1 tomato, sliced. Handful of baby spinach leaves. Salt and pepper to taste.
Instructions: Set a pan on medium heat and add the olive oil. Add the eggs to the pan and cook them until they're done the way you like them. If needed, add salt and pepper. Put a cheese slice on top of each egg to melt it. Put the sandwich together by putting slices of avocado, tomato, and spinach on top of the two toasted English muffin halves. Put a cheesy egg on top of each muffin half, then close the sandwich.
