These Double Peanut Butter Ice Cream Sandwiches are the best treat for peanut butter fans ever. Between two peanut butter cookies is creamy peanut butter ice cream with chopped peanuts all over it.
Ingredients: 1 cup creamy peanut butter. 1/2 cup powdered sugar. 1/2 cup heavy cream. 1/2 teaspoon vanilla extract. 1/2 cup chopped peanuts. 16 peanut butter cookies store-bought or homemade.
Instructions: Put powdered sugar, heavy cream, vanilla extract, and creamy peanut butter in a mixing bowl. Mix until everything is smooth and well mixed. Add the chopped peanuts. Put the mixture in a shallow dish and freeze it for four hours, or until it gets firm. Once the mixture is firm, put a scoop of ice cream on half of the peanut butter cookies and then put the other half of the cookies on top to make sandwiches. If you want the ice cream sandwiches to have even more crunch, roll the edges in more chopped peanuts. Wrap each sandwich in a piece of parchment paper or plastic wrap, then put it back in the freezer until you're ready to serve it.
