Divinity (Requires a Candy Thermometer)
2 2/3 Cups sugar
2/3 Cups light corn syrup
½ Cup water (use 1 Tablespoon less if making on a humid day)
2 Egg whites
1 Teaspoon vanilla
2/3 Cups pecan pieces (other nut meats can also be used)
Cook sugar, corn syrup, and water in a 2 quart pot over low heat while stirring constantly until the sugar is dissolved. Continue to cook without stirring until 260 F (hard ball) on the candy thermometer.
Beat egg whites until stiff peaks form, continue beating as you add the hot syrup in a thin stream. Beat in vanilla and continue beating until mixture holds it's shape and becomes slightly dull. Fold in pecans.
Drop the divinity from a buttered spoon onto wax paper. Let stand at room temperature, turning over once, for at least 12 hours. Store in airtight container.
Divinity candy is rolled in confectioners' sugar and peanut butter before being cut into bite-sized pieces for the holiday dessert tray.
