Stuffed Peppers! 😋 The key is to half them, EVO, S&P then bake just until tender in 400 degree oven *before* stuffing them. The stuffing I used was small diced sautéed veggies, seasoned very well, then add chicken stock & the beautiful final ingredient of Israeli Couscous. 🤤 omg it’s the best! 💚 Cook until couscous is tender/water is absorbed. Stuff them pepper halves, top with cheese & bake until brown.
