I desired a dessert and one that I couldn’t make myself. I left the apartment not knowing specifically where I’d land. In a stroke of genius I remembered Bottega Louie for of confectionary goodness. Understand glass there were many choices. I chose the Cappuccino (Café créme, praline crémeux, hazelnut crisp, almond nougatine & vanilla pâte sucrée) with a decaf coffee. What a magnificent delight. It had the creaminess of flan with the kick of Coffee. I savored every bite. #tbt from the time I worked at Haven, Oakland as a pastry chef assistant for the super talented Carl Swanson. This is a Baked California with tangerine gel and avocado mousse. The Baked California consisted of an almond cookie for the base, a layer of vanilla bean gelato, a later of tangerine sorbet, a layer of lemon sorbet, and the entire thing was covered in shiso meringue and torched. Sometimes we added fennel pollen as a garnish.
