Budget Apple Pie
I did it.
I made my first ever Apple Pie from scratch. And it didn’t explode! YAY!
Just cracked slightly, I didn’t put in enough steam vents, I think. I googled but couldn’t find if I was supposed to grease the bottom of a pie dish. It turns out, yes, you are. The bottom stuck like a champ but the sides came away clean. Maybe the bottom would have too, if I’d left it in the oven for a bit longer. But then it’d be all hard and crusty. I hate it when you bake something too long and it can then be used at a lovely bookend or paperweight.
I got the crust recipe from one of my op shop book binges, called Cutie Pies. If the Yanks do one thing well it’s pie. I’ve never liked the crust more than the filling before. The apple pie filling in the book looked a bit simple so I tried a different one with lots of brown sugar but it was (surprise, surprise) too runny.
I strained out the apples for the pie and this beautiful apple/cinnamon/caramel sauce was left over which I immediately made icing out of for my Apple Cupcakes! (noticing a theme, here?) There’s an Apple Bundt too, but that got yogurt icing, which tasted equally awesome, even if the recipe had the wrong amount and I ended up using a whole bag of icing sugar and drowning my bundt so bad the hole was full of it.
I don’t like the Apple Cake/Cupcake recipe enough to post it. Ah, my kingdom for a good apple cake recipe.
