Denver Egg Casserole is a savory breakfast dish inspired by the classic Denver omelette. It's a perfect make-ahead breakfast for busy mornings or a hearty brunch option for family gatherings.
Ingredients: 6 large eggs. 1/2 cup diced green bell pepper. 1/2 cup diced red bell pepper. 1/2 cup diced onion. 1/2 cup diced ham. 1 cup shredded cheddar cheese. 1/2 cup milk. Salt and pepper to taste. 1 tablespoon butter. Cooking spray.
Instructions: Start by heating the oven to 350F 175C. Put the butter in a big pan and melt it over medium-low heat. Put in the onions and the diced red and green bell peppers. Saut them for about 5 minutes, or until they get soft. When you add the diced ham to the pan, cook for another two to three minutes, until it's fully heated through. Put the eggs and milk in a bowl and whisk them together. Add pepper and salt to taste. Spray cooking spray on a 9x9 inch 23x23 cm baking dish. Even out the vegetables and ham that have been sauted in the baking dish. Cover the vegetables and ham with the egg mix. Add the chopped cheddar cheese on top. The casserole should be baked in a hot oven for 25 to 30 minutes, or until it is set and the top is golden brown. Take it out of the oven and let it cool down for a few minutes before you serve it. Cut your Denver Egg Casserole into pieces, serve it, and enjoy!
