Davy Jones cut out his own heart to avoid feeling sadness and heartbreak over his love, but he keeps the music box and frequently plays the song from it. He didn't want to feel the heartbreak, but he couldn't ever let go. He could have simply tried to avoid ever thinking about it, but he just didn't. He dwelled on it constantly, even as he tried to run from the pain. He never stopped loving her.
Calypso didn't show up after 10 years when Jones was waiting for her. But then she kept the locket music box that matched with his music box. Even though he bound her in human form, she kept the locket. She never stopped loving him.
In the end, they never stopped loving each other.
